Shrimp in Chimichurri and Cream Cheese Sauce by Margareta
This simple recipe has only six ingredients
2 tsp olive oil
1 clove garlic, crushed
6 large shrimp (deveined, cleaned)
1-2 tbsp Chimichurri sauce (homemade or store bought)
1-2 tbsp smoked salmon cream cheese (or plain)
2-3 tbsp evaporated milk
Parsley for garnish
Method:
1. Heat oil in heavy duty skillet, add crushed garlic, cook 2 mins, not burnt.
2. Add shrimp, cook until colour changed to pink, remove from skillet
3. Add chimichurri sauce and cream cheeses and evaporated milk, stir until combined and sauce thickens.
4. Add cooked pasta, mix well, sprinkle with parmesan cheese and parsley.
